Ayurvedic recipes

Simple food, prepared with care.

Melt unsalted organic butter on the lowest heat and simmer for 30–40 minutes until the milk particles sink and the oil turns clear and golden. Remove the moment the sediment begins to brown, skim the surface, then strain through muslin. Cool uncovered. Ghee keeps for months unrefrigerated and is the most heat-stable of all cooking oils.

Soak mung beans for 4 hours or overnight. Heat ghee with turmeric, a pinch of asafoetida, kokum and bay, then add the beans with four parts water to one part beans. Simmer 30–40 minutes (or 10 minutes pressure-cooked) and season late. Less gas-forming than most pulses, it removes toxins and stimulates the digestive fire.

Combine 1kg spelt with 500g each of millet, soya, buckwheat, barley and rye (all organic). Mix well and store airtight, kneading as needed. A little oil or ghee makes softer chapattis, and spelt alone works beautifully too.

Soak raisins, dates and figs or apricots, with seeds and nuts, overnight. Boil with the fruit, then add rolled oats, millet, quinoa or barley and cook until soft. Season with cinnamon and cardamom, use oat, soya or rice milk, and stir in honey only once it has cooled. It keeps you going till lunchtime.

Simmer 4–5 slices of fresh ginger for a few minutes and strain. It loosens mucus and stimulates digestion, ideal just before, or 30 minutes after, a meal. Don’t overuse it, as it raises pitta.

Combine 1 teaspoon each of cumin, coriander and fennel with 4 crushed cardamom pods, a pinch each of black pepper and asafoetida, and 2 slices of ginger, a little rose water is optional. Simmer 5 minutes, infuse 5 more, strain and sip warm through the day.

Seasonal eating

Eat with the rhythm of the seasons and your dominant dosha, cooling, sweet foods to calm Pitta in summer; warm, grounding, oily foods to steady Vata in autumn; light, stimulating foods to lift Kapha in spring.
